Process and product
The selection of an appropriate system to provide the desired opacity in a concentrate at 65 to 68º Brix containing citrus juices allowed the production of a physically and microbiologically stable product without the use of an evaporator. Two formulations were developed - one for consumers and another for industrial applications. Both concentrates should be diluted six times before consumption. The industrial concentrate (after dilution) should be pasteurized to remain stable for a period of up to 9 months at room temperature.
Market
The market targets are juice beverages particularly juice beverage concentrates. These two products will interest companies selling primarily at the retail level or distributors demanding a stable beverage concentrate for sale to another industry.
The intellectual property rights belong to Agriculture and Agri-Food Canada (AAFC), the formulation was developed through scientific collaboration between Agriculture and Agri-Food Canada (AAFC) and others.
